I decided to celebrate the cooler weather with a warming food day…
I had peanut butter and banana oatmeal for breakfast. I like using bananas in my oatmeal, because they act like a sweetened and then I don’t need to add one.
PB Banana Oatmeal:
1 Instant oatmeal packet, plain
1 tablespoon of natural peanut butter
3/4 cup of almond breeze, unsweetened
1/2 a banana, sliced
Cinnamon
Combine all ingredients and microwave for 2 minutes. Mash bananas in the cup when they are warm and stir.
I went to my lunch time yoga class, then after had a bowl of chicken noodle soup. For an afternoon snack I had Greek yogurt with raspberries and blueberries, plus a caveman cookie (alpine flavor), if you have never heard of these, they are kind of like mini larabars, in a cookie shape and have 70-75 calories each.
For dinner I had homemade chicken fried rice. Then after dinner, I wasn’t hungry but it was so chilly, and I had calories left, so I decided to make a hot chocolate. Yum!! It was so good. I love my hot chocolate, it has 105 calories, and is REAL hot cocoa, not the sugar free crap, it tastes amazing!! It’s a perfect, warming, satisfying, chocolate fix that won’t leave you wanting more.
Hot Cocoa:
1 cup of chocolate unsweetened almond breeze (you can use plain or regular milk too)
1 tbsp of unsweetened cocoa powder (the Hershey’s kind has 10 calories per tablespoon)
1 tbsp of sugar (I have tried to make this with Splenda, but it’s disgusting, the real sugar is worth the 50 calories)
Dash of cinnamon, salt, cayenne pepper
In a mug, mix the cocoa, sugar, and a really small amount of cinnamon, salt and cayenne pepper. Add a tablespoon of water and stir until a paste forms, adding a little more water if necessary (this make it easier to stir into the milk). Add the milk and stir until combined. Microwave until hot, but be careful that it doesn’t boil over, about 2 minutes, stir before drinking.
I ate 1,166 calories, 52.1% from carbs, 24.4% from fat, and 23.5% from protein.
